Our "Omakase" embodies the values of patience, honor, dedication, and "omotenashi" (hospitality).

 

"Omakase" translates to "I leave it to you." The unique appeal of an omakase dinner lies in the direct interaction with the chef, allowing guests to entrust the details of their order to the sushi chef. Witnessing Takeda's masterful skills unfold before your eyes becomes a spectacle and entertainment in itself. Moreover, Takeda's 19-piece course changes daily, tailored to reflect customer preferences, providing a sushi journey that is uniquely yours. Steeped in the traditional techniques of Edomae sushi, our seasonal Omakase menu showcases the finest ingredients sourced from across Japan. Indulge in the spectacle and savor the experience!

Yukihiro Takeda

Yukihiro Takeda, the owner/chef of TAKEDA, was born in Osaka, another foodie epicenter. 

While deeply rooted in historical Japanese culinary practices, particularly those dating back to the Edo Period (1603-1868), Takeda's approach to sushi goes beyond the traditional Edomae style. During the early days of Edomae, sushi chefs adapted to the limitations of their time by marinating raw fish with salt, vinegar, or soy sauce, simmering clams, and sea eels, and blanching prawns due to the absence of modern transportation and refrigeration.

Chef Takeda possesses over 30 years of experience mastering various facets of Japanese cuisine, including simmered dishes, grilled offerings, sashimi, and steamed creations. Beyond this rich background, Takeda has honed the art of sushi not only in Japan but also in the vibrant culinary landscape of New York City.

Takeda has devoted the last three decades to mastering the art of sushi, showcasing his expertise in grilling, steaming, sashimi, and traditional sushi nigiri. Takeda has dedicated himself specifically to mastering the art of sushi, sharing his expertise in traditional sushi nigiri while incorporating innovative approaches. Through continuous research, he has perfected his own version of "sushidou" by using traditional dry-aging techniques and sushi rice, he has carefully selected seasonings for. He meticulously attends to every detail and crafts dishes with delicate and visually stunning presentations.
